What's Gyoza?

Japanese gyoza, or dumplings, are a beloved dish in Japan, often enjoyed as a side or snack but equally satisfying as a main course. Gyoza originated from Chinese dumplings known as "jiaozi," but over time, they have developed a unique Japanese twist, both in preparation and flavor. Japanese gyoza are commonly pan-fried, giving them a crispy outside with a juicy, flavorful filling inside.

Types of Gyoza

There are several popular varieties of gyoza in Japan, with different cooking methods and filling combinations.

1. Yaki Gyoza (Pan-fried Gyoza):
The most popular style, yaki gyoza is pan-fried on one side, giving it a deliciously crispy bottom while the top stays soft and tender. The filling usually consists of ground pork, cabbage, green onion, garlic, and ginger.

2. Sui Gyoza (Boiled Gyoza):

3. Age Gyoza (Deep-fried Gyoza):

4. Vegetarian or Seafood Gyoza:
Though traditionally made with pork, some gyoza varieties feature vegetable-only fillings like cabbage, shiitake mushrooms, and chives, or even seafood fillings such as shrimp or crab. Vegetarian and seafood gyoza are great alternatives for those who don’t eat meat or want a lighter taste.

Flavor of Gyoza

The flavor of Japanese gyoza is a blend of savory and slightly garlicky, with the main taste coming from the pork and cabbage filling. Garlic, ginger, and green onions are often added to enhance the richness and bring an aromatic quality to each bite. At high-end restaurants or izakayas with premium fillings, prices can be even higher, especially for unique or seasonal ingredients.
